  • 150 grams of Farmhouse Cheese, grated
  • 300 grams of risotto rice
  • 200 grams of fresh spinach, chopped
  • 1100 ml of chicken stock, made from stock cube
  • 1 onion, chopped
  • 1 clove of garlic, chopped
  • 130 grams of sun-dried tomatoes, cut into small pieces
  • 65 grams of pine nuts, toasted
  • Handful of fresh basil
  • Salt and pepper for seasoning


  1. Heat some olive oil in a pan and sauté the onion and garlic for 2 minutes.
  2. Add the rice and cook for 2 minutes until the grains are translucent.
  3. Gradually add half of the chicken stock while stirring, and continue stirring until the liquid is fully mixed.
  4. Add the remaining stock and simmer the rice for 20 minutes.
  5. After 15 minutes, add the chopped spinach and sun-dried tomatoes to the risotto.
  6. After 5 more minutes, check that the rice is nicely cooked and remove the pan from heat.
  7. Stir in the grated cheese and toasted pine nuts.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh basil before serving.
