Chloe Milburn's Truffle Macaroni and Cheese Recipe

Chloe Milburn's recipe for Truffle Macaroni and Cheese serves 4 people and requires the following ingredients:

  • 100g Creamy Gouda
  • 50g Maasdam
  • 100g Truffle Gouda
  • Truffle oil
  • 250g macaroni
  • 1 red onion, chopped
  • 3 garlic cloves, chopped
  • 1 leek, sliced
  • 100g mixed mushrooms
  • 1/2 tbsp Mushroom powder
  • 1 tbsp Mushroom & truffle paste
  • 1 tbsp Balsamic glaze (can be replaced with a splash of balsamic vinegar and Worcester sauce)
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1 tsp onion granules
  • 50g plain flour
  • 100g butter
  • 50ml prosecco
  • 250ml whole milk
  • 100ml single cream
  • Handful breadcrumbs
  • Handful chives, chopped

Method:

  1. Preheat the oven to 200°C.
  2. Heat a large glug of truffle oil in a pan over medium heat. Add garlic and cook for a minute. Add onion and cook for three minutes until translucent. Add 50g butter. Add the leeks and fry for 5-10 mins. Season with salt and pepper. Stir in mushroom powder and mushroom and truffle paste (or a large glug of truffle oil and a tablespoon of balsamic glaze). Add mushrooms. Add balsamic, Worcestershire sauce, garlic and onion powder. Set aside.
  3. Bring a large pan of salted water to the boil and cook the macaroni pasta for 8 minutes. Drain and set aside.
  4. Melt the remaining butter in a saucepan and add flour. Stir with a wooden spoon to make a roux. Take off the heat and add prosecco. Slowly add the milk, stirring constantly. Add the cream. Heat gently, stirring until the mixture thickens and boils. Stir through all the cheese but leave a handful of Gouda to sprinkle on top. Season with salt and pepper.
  5. Add the leek and mushroom mixture, chives, and mustard to the cheese sauce. Then add the pasta and mix until well combined.
  6. Pour the mixture into an oven-proof dish and sprinkle the remaining Gouda cheese, breadcrumbs, and a drizzle of truffle oil on top.
  7. Place in the preheated oven and bake for 10 minutes until golden brown.
