Cheesy Nettle and Garlic Paella Recipe


For the Paella:

  • 1 1/2 cups Arborio rice
  • 1/2 cup shredded Nettle and Garlic cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup frozen peas
  • 1/2 cup artichoke hearts, quartered
  • 1/2 cup green beans, trimmed and cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1/2 cup dry white wine
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads (optional)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

  1. Start by preparing the Nettle and Garlic Cheese. In a medium mixing bowl, combine the shredded cheddar cheese

  2. In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until they become translucent, about 2-3 minutes.

  3. Add the diced red and yellow bell peppers, green beans, and sauté for another 2-3 minutes until they start to soften.

  4. Stir in the Arborio rice and smoked paprika, ensuring the rice is well-coated with the paprika and oil mixture.

  5. Pour in the white wine and cook for 2-3 minutes until most of the liquid has evaporated.

  6. If using saffron threads, dissolve them in a couple of tablespoons of warm water and add them to the pan.

  7. Begin adding the vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more broth. Continue this process until the rice is creamy and cooked al dente. This should take about 18-20 minutes.

  8. About halfway through cooking the rice, add the cherry tomatoes, frozen peas, and artichoke hearts. Stir them into the rice.

  9. Once the rice is cooked, remove the paella from heat. Sprinkle the shredded Nettle and Garlic cheese evenly over the top.

  10. Cover the paella with a lid and let it sit for a few minutes, allowing the cheese to melt from the residual heat.

  11. Garnish the paella with fresh parsley and serve with lemon wedges on the side.
