Unpasteurised Farmhouse 4 Year Old Cheese Risotto
Ingredients:
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 cup Unpasteurised Farmhouse 4 Year Old Cheese, grated
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a saucepan, heat the chicken or vegetable broth over medium heat until warm.
- In a separate large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the Arborio rice to the skillet and toast for about 2 minutes, stirring constantly.
- Pour in the white wine and stir until absorbed by the rice.
- Begin adding the warm broth to the rice, one ladle at a time, stirring frequently. Allow each addition of broth to be absorbed before adding more. Continue until the rice is creamy and cooked to al dente, about 18-20 minutes.
- Once the risotto reaches the desired consistency, stir in the grated Unpasteurised Farmhouse 4 Year Old Cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve the risotto hot, garnished with fresh chopped parsley.
