Unpasteurised Farmhouse 4 Year Old Cheese Risotto

Ingredients:

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup Unpasteurised Farmhouse 4 Year Old Cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a saucepan, heat the chicken or vegetable broth over medium heat until warm.
  2. In a separate large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the Arborio rice to the skillet and toast for about 2 minutes, stirring constantly.
  4. Pour in the white wine and stir until absorbed by the rice.
  5. Begin adding the warm broth to the rice, one ladle at a time, stirring frequently. Allow each addition of broth to be absorbed before adding more. Continue until the rice is creamy and cooked to al dente, about 18-20 minutes.
  6. Once the risotto reaches the desired consistency, stir in the grated Unpasteurised Farmhouse 4 Year Old Cheese until melted and well combined.
  7. Season with salt and pepper to taste.
  8. Serve the risotto hot, garnished with fresh chopped parsley.
