hropshire Blue is made from pasteurised cow's milk and is produced by the Long Clawson Dairy in Leicestershire and the Cropwell Bishop and Colston Bassett dairies in Nottinghamshire. The cheese was first created in the 1970s by Andy Williamson at the Castle Stuart Dairy in Inverness, where it was initially named Blue Stuart or 'Inverness-shire Blue.'

Shropshire Blue is a semi-firm blue cheese, described as a cross between Stilton and Cheshire. Over a period of 10-12 weeks, it develops an orange-brown natural rind and a smooth texture. With a sharp, strong flavour and tangy aroma, it is a vegetarian cheese with a fat content of 48%. It pairs well with Port Noir and Riesling.
